Mocktail: Add 3/4 oz honey syrup to a glass of lemonade with ice and stir well to dissolve. Garnish with a lemon twist.
Snack: Millionaire Shortbread
For the crust:
1 cup butter, softened
1/2 cup sugar
2 egg yolks, room temperature
1/4 tsp salt
2 cups (250 g) flour
For the caramel:
2 (14-oz) cans sweetened condensed milk
250 g brown sugar
3/4 cup butter, sliced
1/4 cup light corn syrup
1 tsp vanilla extract
1/4 tsp salt
For the ganache:
8 oz semi-sweet chocolate chips
1/3 cup heavy whipping cream
sea salt for garnish (optional)
Preheat oven to 350 degrees and line a baking tray with parchment paper, allowing the paper to extend past the edges of the tray. In a large mixing bowl, cream the butter and sugar for about 2 minutes with an electric mixer. Mix in egg yolks and salt. Add flour and mix on low speed until mixture starts to come together but is still crumbly. Press into the prepared tray to form an even layer. Bake for 23 to 28 minutes, or until the top is set and the edges are lightly golden brown. Remove from the oven and set aside to cool completely on a wire rack. While the crust is cooling, prepare the caramel by adding the sweetened condensed milk, brown sugar, butter, and corn syrup to a large saucepan and heat over medium heating, whisking constantly, until it comes to a boil. Continue cooking for 8 to 13 minutes, whisking constantly, until the mixture thickens, starts to pull away from the sides of the pan, and turns a caramel color. Test the mixture by filling a glass with cold water and dropping a small spoonful of caramel into it. If you can form a soft ball, it’s ready. Remove from heat and stir in vanilla and salt. Pour over the cooled crust and spread evenly. Refrigerate for 1 hour or until the caramel is mostly set. Once caramel is set, combine the chocolate bits and cream in a large heat-proof bowl. Microwave in 20-second increments, stirring well after each increment, until the chocolate is completely melted and smooth. Pour over the top of the bars, and spread evenly. Sprinkle lightly with sea salt, if desired. Return pan to the refrigerator and chill for 1 to 2 hours or until the chocolate is set and firm. Lift the bars out of the pan using the overhang from the parchment paper, slice into pieces, and serve.
